Farsumagru o Braciolone
One 1-1/2 pound round steak
1 pound ground beef
1/2 cup breadcrumbs
1 chopped medium-sized onion
2 minced garlic cloves, 1 egg (raw)
1/2 cup grated Pecorino Romano cheese
3-4 hard-boiled eggs, sliced
1/2 teaspoon salt
1/4 teaspoon black pepper
Olive oil, Butchers twine
Pound the steak thin. Be careful not to tear through the meat.
Combine ground beef, onion, breadcrumbs, garlic, cheese, egg(raw), salt, and pepper. Spread filling evenly over round steak.
Place hard-boiled eggs slices along meat.
Roll, and tie securely with butchers twine.
In a large skillet, brown meat roll (all sides)in hot olive oil.
Remove meat roll and set aside.
In the same skillet add 5 cups (or more) of plain tomato sauce.
Bring sauce to a boil; lower heat;
add meat roll and simmer slowly until meat is tender.(2 hours)
Remove meat roll from sauce and cool for 1 hour before slicing.
Discard butchers twine.
Cut in 1/2-inch slices, arrange on a serving platter.
Spoon hot tomato sauce over slices and serve.
The remaining tomato sauce can be used with a pasta side dish.
Variation: Feel free to add your own ingredients such as Prosciutto, Sausage,
and Bacon etc. as a substitute for the ground beef or in addition.
